12 oz packet of sausages
16 large eggs
1 cup Cheddar Cheese (shredded)
½ cup milk
1 tbsp vegetable oil
1 tsp baking powder
Salt & black pepper to taste
½ cup Parmesan Cheese (shredded)

Instructions:

1) Preheat oven up to 375 Fahrenheit. Spray 2 muffin pans with a cooking spray or line them with cupcake liners.
2) Spoon the pieces of sausages into each cupcake and set them aside.
3) Take a medium-sized bowl, whisk eggs, milk, oil and baking powder until they get smoother. Gently add cheddar cheese and sprinkle salt and black pepper to taste. 
4) Pour the egg mixture over the sausages. Bake them for 15 minutes until the eggs are cooked completely.

Ingredients:

20 oz refrigerated hash brown potatoes (shredded)
2tablespoons of vegetable oil
½ teaspoon salt
¼ teaspoon pepper
6 eggs
2 tablespoons of milk
¾ cup crisply cooked bacon
¾ cup Cheddar cheese (shredded)
Sriracha Sauce

Instructions:

1) Heat oven up to 400 Fahrenheit. Place a foil liner in 12 regular sized muffin cups and spray them with cooking oil.
2) Take a large bowl. Mix oil, potatoes, salt and pepper in it. Divide the mixture evenly in the cups and mix them lightly.
3) Bake for 45 to 55 minutes until golden brown.
4) Take another medium bowl, beat eggs and milk together. Stir the bacon and cheese in them. Mix them well. Now top each of the cupcakes with a 1/4th cup of egg mixture.
5) Bake again for 13-16 minutes. Insert a knife or a toothpick in the center of eggs, if it comes out clean indicating that your cupcakes are ready. Cool them for 5 minutes and serve with Sriracha sauce. You may also use any of your favorite hot sauce or ketchup of your choice. If you wish to store them for a few days, take an airtight container or keeping them in good-quality cake boxes can serve the purpose.

3. Whole-Grain Bran Muffins:

This classic recipe is a perfect mix of nutritional foods which everyone will love to eat.  It serves as a good alternative for one who loves having bread and bun on the breakfast table. You can go for a number of add-ons of your choice. The addition of sunflower seeds with berries or grated carrots with walnuts works well.

Ingredients:

1 3/4 cups wheat bran
1 cup whole pitted dates
3/4 cup fresh orange juice
1 cup fat-free buttermilk
1/2 cup mashed ripe banana (medium-sized)
2 tablespoons butter (melted)
2 tablespoons canola oil
1 teaspoon vanilla extract
1 cup whole-grain pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon (grounded)
1/4 teaspoon salt
2 large eggs

Instructions:

1) Preheat the oven to 350°F.
2) Spread bran on the baking sheet. Bake it for 8-10 minutes or until the light brown.
3) Combine dates and orange juice in a saucepan. Heat on medium flame anyou d bring them to boil. Cover them for 20 minutes. Remove from heat and let them cool. Put the date mixture in a blender and process until smooth. Add buttermilk and next four ingredients. Blend them again.
4) Add a spoon of the floor in a dry measuring cup. Level it with a knife. Take flour, bran, baking powder and next three ingredients in a medium-sized bowl. Stir them with a whisk.
5) Add the date mixture to the bran mixture. Stir them until moist and then add eggs. Mix them again. Place 12 cupcake liners in the pan and coat them with a cooking spray. Pour the batter in the muffin cups. Bake for 28-30 minutes at 350 Fahrenheit. Insert a toothpick if it comes out clean, it indicates that your cupcakes are ready.  Let them cool on a wire rack.
